Abstract
The article presents the results of studies on the effect of the size of dry non-granulated beet pulp particles on the process of preliminary decationization. Disubstituted sodium salt of ethylenediaminetetraacetic acid was used as a model complexone in fractional concentrations from a fiducial value of 2.87 g / dm3. The global extremes of the dynamics of the specific electrical conductivity of the system “beet pulp - complexone solution” have been selected as a primary response, as corresponding to the moment of complexone saturation with cations. It’s been established that decatonization of a coarse fraction (≥ 5 mm) requires processing of the pulp with an aqueous solution of complexone with a concentration of 3.49 g / dm3 for ~ 43 minutes, whereas for the fine fraction (<5 mm) these parameters will be 3, 81 g / dm3 and ~ 49 minutes, respectively. This, presumably, is due to the fact that in the variant with a more developed surface, the availability of cations of the cell wall matrix increases, and therefore a high concentration of complexone and a longer processing time are necessary for effective decationization.

Abstract
The dynamics of the indicator of the reducing ability of two-component canned fruit during 24 months of storage has been studied. A hypothesis has been proposed that during storage of two-component puree products based on lingonberries, cranberries, strawberries and apples, there are two time-parallel, but opposite in process values: inhibitory interaction between individual chemical components and accumulation of RH-active hydrolysis products. A hypothesis has also been proposed that during storage of two-component puree products based on grapes, cherries and apples, there are two consecutive process times: some initial accumulation of hydrolytic active components and accumulation of RH-active hydrolysis products. It has been established that for the studied systems (with the exception of grapes) there is a certain tendency towards a negative relationship between the reducing ability of canned food and the initial value of the indicator at the time of the start of storage. The data obtained are primary in the overall picture of the formation of the redox properties of homogeneous products.

Abstract
In order to reduce material costs for the production of chebureks completely ready-to-eat (convenience food), the possibility of using meat side products ingredients in their composition has been studied. It has been established that when such ingredients are added to the recipe for minced meat of chebureks, the cost of food production decreases without changing the quality.

Abstract
The article deals with the problem of determining the basis for the evolution of complex economic systems by identifying the driving forces and formalizing the mechanisms of such transformations. The concept of information selection, which is described in Shannon’s information theory criteria, is used as a basic theory, which made it possible to determine the patterns of formation and accumulation of information by economic entities, which is consistent with the concepts of genetic selection in Biology and is used for subsequent formalization. It’s been shown that the difference in economic evolutionary transformations is explained by means of cenological postulates of transformation of complex systems that can be used to describe evolution. Using the example of IT industries, the nature of the manifestation of cenological patterns in the formation of business -ructures with completely new genetic properties has been demonstrated.

Abstract
The article presents the results of the assessment of the dynamics of winter hardiness of promising forms of tea and the influence of the temperature factor on the degree of damage to the tissues of the shoots and leaves. Abstract
The article presents the results of a three-year study of atomizing tea plantations in the foothills of Adygea. The research results showed a high efficiency of this method of irrigation: yields has increased on average by 65% over three years and amounted to 56.25 c / ha, and on the control (without irrigation) - 34.09 c / ha.When watering the percentage of dormant bud has decreased 2.3-2.8 times in tea raw materials. There is a tendency to increase the average weight and length of flushes. Biochemical indicators of the quality of tea raw materials were at a high level: the content of tannin on the control was 21.63 ± 0.99%, with a flood - 22.17 ± 0.57%; extractives on the control - 41.07 ± 0.21%, with a flood - 40.77 ± 0.09%. Variance analysis showed no statistically significant differences between the variants.

Abstract
The article presents the results of a study of the effect of complex feed additives on the biochemical parameters of the blood serum of broiler chickens. It’s been established that a complex feed, consisting of a feed vitamin-mineral concentrate and a probiotic feed additive, has a positive effect on the biochemical homeostasis of the blood of broiler chickens, which is due to their synergistic effect.

Abstract
The article considers the productivity of the most promising forms of tea in the collection-breeding plot in the village of Uch-Dere, Sochi. The data on the productivity of the selected forms for two years of the research, both by year and in the context of yield dynamics during the collections for the growing season in 2017 have been presented. More productive stable forms have been defined (13-09, 13-13, 13-23). There has been a difference in yield in all forms, including control 79-79, depending on weather conditions of the current and previous research period from 8.7% (form 13-23) to 37.3% (form 13-25), with an average indicator of 23.7%. A correlation analysis of all forms has been carried out and a direct close connection has been revealed between indicators such as the height and width of the trellis (the correlation coefficient between them is 0.84) and between productivity and the length of the flush (0.74).

The range of content of a number of essential macro- and microelements, as well as non-essential and toxic elements in a 3-leaf flush of Colchis tea (raw material) grown in the conditions of the Black Sea coast of Russia has been established. The content of the main macronutrients was within (in% of abs. dry sub.): N-3.80-5.44; P-0.38-0.56; K-1.55-1.78; Ca-0.14-0.24; Mg-0.19-0.22. The content of micro- elements was (in mg / kg): Mn - 423-856; Fe - 28.8-52.2; Zn 29.6-45.8; Co-0.11-0.27.
