Abstract
The research is devoted to the identification and investigation of the chemical composition of the minor components of distillation refining cuts of sunflower oils obtained by large Russian oil refineries. Minor components of the nonsaponifying fraction have been identified, among which the nitrogen containing substances, hydrocarbons and oxidation products are found. These components have varying degrees of volatility, cause a dark color of the distillates and have a negative effect on the efficiency of the processes of dividing the distillate cuts into constituent components. On the basis of the analysis of the results obtained, it’s been concluded that for effective processing of distillation cuts in order to obtain purified fatty acids and concentrates of valuable substances of the nonsaponifiable fraction, a process of preliminary removal of undesirable minor components should be carried out.

Abstract
The analysis of quantitative and qualitative composition of phytosterols and tocopherols in samples of distillation cuts of sunflower oils obtained as secondary products of physical refining has been carried out. It has been found that the tocopherols and phytosterols contained in distillation cuts of sunflower oils corresponded to their analogues that are contained in the feedstock. The levels of tocopherols and phytosterols correspond to the data presented in the foreign literature and allow us to consider domestic distillation cuts as a promising raw material for the production of phytosterols and tocopherol concentrates.

Abstract
Processing of food products by ionizing radiation that has been used for more than 20 years in various countries, has been legally permitted in Russia since 2017. Investigations of domestic and foreign scientists have proved the suitability of this treatment method for the purpose of sterilizing various types of products. The authors consider data on the effect of ionizing radiation on consumer properties of products to be insufficient. Sensory properties of minced poultry meat with the addition of plant powders subjected to irradiation with doses of varying power have been assessed. The results of the studies have shown significant changes in the organoleptic properties of a product when irradiated at 30 kGy and the possibility of maintaining sensory properties when irradiated with a dose of 12 kGy. The results of the research have determined the direction of further research on consumer properties, namely, nutritional value and safety of products exposed to a dose of 12 kGy.

Abstract
Consumer characteristics of a bakery product have been assessed. It’s been established that the developed "Topitam" sweet bun has a higher rating and nutritional value according to organoleptic, physicochemical indicators and safety indicators than the product developed according to the traditional recipe.

Abstract
The article presents the studies of the influence of ultrasonic treatment on the speed and quality of fish fillet defrosting - cod and tilapia. The results of physical and chemical studies of ultrasonically treated defrosted fish are presented. A laboratory installation for carrying out experimental work has been described. A method for fish fillet defrosting using an ultrasonic generator is proposed. It’s been established that the use of ultrasonic treatment significantly shortens the term of the defrosting process and does not affect the organoleptic parameters of the quality of fish fillet defrosting. Optimum mode of equipment operation is selected.

The article considers the influence of temperature and fermentation period on the properties of the dough prepared by the accelerated method and the quality of the finished bread. Abstract
The article presents the results of studies on the quality of dried (dry) Adyghcheese based on sensory evaluation of control samples of cheese; physicochemical indicators and safety indicators of the product have been determined. The authors substantiate the possibility of using Adygh dried (dry) "Mate" cheese in the production of culinary products. Innovative dishes have been developed: "Medallions with cheese sauce", "Salmon with “Mate” sauce, “Omelette with “Mate” cheese”.

Abstract
During the experiment broiler chickens were the object of the research. The purpose of the study was to study the effect of different doses of the Oxy-Nile mold inhibitor in rations with an increased content of B1 aflatoxin on the utility-beneficial qualities and functional activity of the liver of broiler chickens. In the course of the experiment, it was established that to optimize utility indicators and functional activity of the liver in the feed of broiler chickens with a tolerant concentration of B1 aflatoxin , it is recommended to include the Oxy-Nile mold inhibitor in the amount of 600 g / t of feed.

Abstract
It is shown that in the conditions of the southern foothill zone of Adygea, on the leached chernozems under winter wheat cultivated after corn, it is expedient to add the total nitrogen dose to the phase of spring vegetation renewal and to the phase of the beginning of booting in doses at 0:60:60 c / ha, and for the predecessor of sunflower - during sowing, in the spring resumption of vegetation and the beginning of booting in doses at 30:60:30 c / ha.

Abstract
In the conditions of the Sochi Black Sea region representatives of Blueflag species from the Limniris subgenus - Iris pseudacorus and I. sibirica begin to vegetate in the first decade of February and the second decade of March, respectively. Decorativeness is preserved for a long time- up to 250 days (I. sibirica) and 306 days (I. pseudacorus). They have high decorative qualities. The intensity of vegetative reproduction, as well as the ability to seed reproduction of the studied species, indicates adaptation to new conditions of cultivation.

Abstract
The article presents data for 2015-2016 research on the collectible-stool bed in the village of Uch-Dere. Tea bush habitus, the average mass of productive shoots (flushes), the average length of 2-3 leaf flushes have been characterized. 8 more productive varieties have been registered, including the 79-79 control. A close correlation between the parameters of height and width of a tea bush (0.445) with a width and height of the bush of 100 cm has been determined. A close correlation between the average mass and the length of productive shoots (flush) - 0.4822 has been marked.

Abstract
The results of long-term studies on the establishment of optimal dosage of herbicide application in the cultivation of sugar beet on the chernozems of the leached Adygea Republic are presented. It has been established that the highest yield (24.5 t / ha) of sugar beet is achieved with the use of the Frontier Optima herbicide with the norm of 1.2 l / ha, soil - before the emergence of the crop. At the same time, the level of profitability of products was 123.7%. Similar results were obtained when using the Caribou herbicide, with a yield of 23.7 t / ha, the level of profitability of the products reached 123.4%.

Abstract
Treatment of table beet root of Bordeaux 237 variety with Biostim growth stimulator when growing in severe climatic conditions of the zone of agricultural risk of Russia increases its yield by 28.9% and the quality indexes by 7.5-20.7% compared to beets grown without treatment. During six months of refrigerated storage, the loss of quality and weight of the beet treated and not treated with the preparation did not exceed 6-8%.

Abstract
The article presents the results of an assessment of the state of agrophysical and agrochemical properties of fused and leached chernozems and determination of the most promising crops for cultivation on these soil subtypes. It has been revealed that the leached chernozems are the most optimal soils of the Republic of Adygea for the cultivation of field crops. They have a large thickness of the humus layer, a loose and slightly densified composition along the profile, a favorable ratio of all types of porosity and absorbed bases, accessibility of basic nutrients, optimal reaction of the medium, which makes it possible to cultivate most of the crops on these soils.

Abstract
There are a large number of different indicators (particular criteria) of the life quality and various ways of their aggregation in an integral criterion. There are also a large number of different standards of quality of life at various levels: from urban to national and international. However, in all these standards, the availability of indicators characterizing the quality of the natural environment is general, i.e. environmental factors. The problem is that both quality of life indicators and environmental factors are described in different types of scales (nominal, ordinal and numerical) and in different units of measurement, and how to process them in one model is not clear. Traditionally, only numeric indicators are used which, for processing, are normalized in relative units relative to the range of variation of the quantity and aggregated as average geometric indicators or simply average ones. According to the authors, both the first and the second are incorrect, because they neutralize the effect of various environmental factors on the quality of life, which leads to a loss of information on the strength and sign of the influence of environmental factors on the resulting indicators that characterize the quality of life. To solve this problem it is proposed: 1) not to discard the indicators measured in nominal and ordinal scales, but to increase their degree of formalization to numerical ones and then process them together with numeric ones, this provides the possibility of sharing different types of scales in one model; 2) to ensure the comparability of the processing of indicators measured in different units of measurement by the fact that they are all transformed into one unit of measure: the unit of information; 3) to use as an integral criterion not the average one, but the amount of information in the values of environmental factors about the values of indicators that characterize the quality of life. However, this approach has not been considered in the literature. The article is aimed at completing this gap.

Abstract
Multiindustry corporations represent the amalgamation of a large number of business entities of various legal forms (legal entities and individuals) in order to more effectively conduct a common business. At the same time, economic entities that are parts of the corporation retain their independence, but coordinate their activities with one another in order to obtain a systemic (synergistic) effect. This means that a corporation is a super complex nonlinear system. At present, the problem of modeling such systems has not been solved in the theory of automatic and automated control and in multivariate analysis. Therefore, management of such management objects is carried out on the basis of intuition, experience and professional competence of top managers, especially a head of a corporation. At the same time, today artificial intelligence technologies can be used to enhance the capabilities of top managers. In the scientific literature the question of the use of intellectual systems, in particular cognitive technologies (cognitivistics) for the management of corporations has not been practically covered. The article is aimed to complete this gap.

Abstract
The main functional characteristics of controlling as a modern management category have been considered in the article. The relevance of controlling in the enterprise has been justified. A conceptual model of controlling as a modern management system has been proposed, which allows to integrate and coordinate all its elements. The main objectives of the controlling system are the formation of a development strategy, the orientation of management on the set goals, the prevention of crisis situations. The tools of controlling have been proposed, the application of which will ensure the achievement of the objectives of the enterprise.
