The application of the NMR method will greatly simplify the process of determining the acid number of lecithins and eliminate the influence of a human factor on the results of analyzes.

Abstract
Food processing with high hydrostatic pressure has been considered by the authors as a way to increase the preservation ability in the context of ensuring the quality and safety of meat products. Various authors have conducted research and collected evidential basis on the suitability of this processing method to increase shelf life. The research confirms this statement, and the algorithm formed by the authors for assessing the properties of meat products allows to conduct comprehensive studies and determine the degree of impact on functional properties.

Abstract
The article presents data on the study of the influence of spices - sage, rosemary and ginger, used as a prescription component on the quality indicators of semi-finished fish products. Physical, chemical and organoleptic indicators of the quality of experimental samples have been studied, and the positive effect of spices on the stability of semi-finished fish products during storage have been shown. The use of spices, in particular rosemary and sage, allows to slow down the oxidation process and increase the shelf life of chilled fish semi-products.

Abstract
Resistance to inhaling and pressure overfall of filter sticks are of great importance for the manufacture of tobacco products with the specified parameters of quality and safety. Methods for determining these indicators, devices for their measurement are constantly improved. In this regard, an interstate standard is being developed according to ISO 6565: 2015 version in order to update and comply with international requirements when testing tobacco products, which, after adoption, will be used by testing laboratories in preparing cigarettes for analytical definitions during machine smoking.

Abstract
Creating bread technology using rice flour with the highest consumer qualities will increase the nutritional value of bread and expand the assortment of products. Rice flour protein, unlike wheat flour, does not have the ability to form and therefore creates some difficulties in the manufacture of bakery products. The studies examined the effects of the addition of rice flour in the amount of 10% to 50% of rice flour to wheat flour. Studies of the quality indicators of bread showed that with an increase in the amount of rice flour introduced, the quality of the manufactured products changed. The volume of bread, the structure of porosity and the quality of gluten become better when rice flour is added up to 10%. The quality of bread decreases with an increase in the amount of rice flour to 20%, namely the crumb becomes darker, tears and cracks appear. The results of the study have shown that the addition of sea buckthorn juice to the total mass of flour, and with the accumulation of acid 2.8 degrees / hour, the total acidity of the dough increases by 12.5%. This dose was applied in subsequent research papers. Laboratory baking with the addition to the dough of sea buckthorn juice in an amount of from 2.5 to 15% by weight of flour in the semi-finished product has been conducted. In the production of bread using rice flour, the addition of sea buckthorn juice to the semi-finished product at a dosage of 12.5% of the total weight of flour contributes to an improvement in the quality of the product. Thus, the specific volume of the finished product is increased by 7%, the porosity by 12% compared with the control option. The porosity is more uniform, the crumb bleaching effect was observed.

Abstract
For the development of functional purpose bakery products broccoli powder or leek powder enriched with selenium were added to wheat flour. Domestic crops such as broccoli (Tonus variety) and leek (Premier variety) were used as plant raw materials. In the process of growing plants technology of enrichment with selenium was used. Developed bakery products containing enriched powders are functional products, satisfying the daily need for selenium from 14% to 32%.

Abstract
Characteristics of initial raw material and its active components, which allowed to scientifically substantiate qualitative and quantitative composition of the formulation of a new phytocomplex in the form of dietary supplements have been considered. Synergistic properties of prescription components allowed to determine the functional orientation of the developed product - as a processing aid in prevention and complex treatment of acute inflammatory diseases, which was confirmed by clinical trials in a group of patients with focal pneumonia and acute respiratory viral infection. A specialized product is included in the federal register of dietary supplements, approved and introduced into production at the enterprises of the Artlife company (Tomsk).

Abstract
Baking properties of the composite mixtures of flour (wheatand spelt) have been assessed. It ‘s shown that the introduction of spelt flour into the mixture leads to an increase in the activity of amylolytic enzymes. A decrease in the mass fraction of raw gluten in all samples of dough with the introduction of selt flour is observed. According to the results of experimental studies, the introduction of spelt flour in the amount of 40% will ensure the functional properties of finished products.

Abstract
This article is devoted to the study of the mechanism of a chlorophyll and phospholipids adsorption in sunflower oil refining on the refining earth obtained from diatomite. A chlorophyll is found to be predominantly sorbed at low pH values, and phospholipids at high pH values. It’s been found that during the adsorption refining of sunflower oil in an acidic medium, a chlorophyll prevents adsorption of phospholipids.

Abstract
A mathematical model of the problem of network distribution of production problems at an enterprise has been studied. A specific class of scale-invariant graphs, called pre-fractal graphs is used as a model of an hierarchical structure of an organization divisions. As a result, the task of distributing production problems is reduced to the problem of covering a prefractal graph with simple non-intersecting chains in a multi-criteria formulation.

Abstract
The article considers various approaches to regulation of information services in the conditions of digitalization. It indicates the presence of two conceptual approaches to identifying areas of support for the development of information services, characteristic, respectively, for the industrialized countries of Europe and North America, on the one hand, and for the states of the Far Eastern region, on the other. Within the Anglo-Saxon model framework, the main attention is paid to the institutional and infrastructural support of the information services market, which is manifested in the creation of an “information superhighway” and its service, in the European (continental) model the emphasis is on creating uniform supranational information services markets and termination of “information enequality” , The Asian model is focused on a tighter approach to regulating the market for information services based on the provision of interrelations between traditional values and transformational changes characteristic of the digital economy era.

Abstract
Introduced Persica vulgaris (Mill.) varieties grown in the Institute for Floriculture and Subtropical Crops have been characterized. In order to identify promising varieties of different ecological and geographical origin for cultivation in the conditions of Sochi by biochemical analyzes methods, the Collins, Maykrest, Dixired, Redhaven (st.), Big Top, Veteran and Fayette varieties have been studied. The results of the biochemical analysis of new peach varieties are given: quantitative content of sugar, acidity, dry matter and vitamin C. Sugar-acid ratio has been established, the ratio of which is influenced by the peach ripening period and the climatic conditions of the subtropics of Russia.

Abstract
The article presents the influence of drop irrigation regimes on the mineral nutrition of actinidia plants of the industrial delicacy Hayward variety and the enzymatic activity of the soil. The most optimal irrigation mode is on reaching a pre-threshold humidity of 80% of HB. Watering at a humidity of 90% of HB has caused leaching of nitrate nitrogen. The urease enzymatic activity of the soil under the plants has increased, which increases their nitrogen nutrition.

Abstract
The combination of high potential productivity and resistance to abiotic stressors is considered to be the main priority and criterion for evaluating Japanese Persimmon varieties. All varieties of Japanese persimmon grown in humid subtropics can be divided into intensive, plastic, low ecological plasticity and homeostatic ones - not responsive to environmental changes on the basis of the analysis conducted to assess the parameters of environmental plasticity and stability, depending on the conditions of a year.

Abstract
Morphometric parameters of somatic clones induced from the callus culture of of the local tea population microsprouts have been studied. Under conditions of long-term (7 years) cultivation in vitro, with additional mutational load, in the form of exogenous growth regulators and other factors, somaclonal variability increases and almost all the main morphological features of tea microshoots are affected. 15 tea somaclones have been selected, which exceeded the initial control phenotype (local population) by a complex of morphological characters and may be involved in the selection process.

Abstract
The possibility of creating new modern genotypes of Pelargonium L.Her.ex Ait. genus by method of interspecific hybridization. Economically valuable recombinants and promising combinations of crosses have been outlined and promising forms have been highlighted. P.crispum varieties resistant to extreme environmental factors of humid subtropics of the south of the Krasnodar Territory have been obtained for the first time. Five varieties of P.crispum are registered in the State Register of Breeding Achievements of the Russian Federation.

Abstract
The influence of natural and man-made factors on the development and ecological state of forest plantations in the sanitary protection zone near the large industrial enterprise OOO “Tomskneftekhim” has been studied. Plantings in "Sandy Lake” specially protected natural area of regional significance served as control ones. The influence of industrial production on growth and development of trees has been determined, as a result of which it has been revealed that the growth rate of Scots pine in control plantings is significantly higher than in areas subject to the influence of industrial factors. The study of the influence of climatic factors on the growth and development of forests has showed that there is a correlation relationship between the signs in the sanitary protection zone: the temperature regime has influenced the increase in biomass. In years with a high average temperature, the average annual growth of Scots pine decreases in comparison with years with a more moderate temperature regime. The influence of precipitation on the average annual radial increment of Scots pine has been analyzed, no dependence has identified. The construction of a two-factor model of the dependence of growth and state of tree stands of the SPZ of OOO “Tomskneftekhim”, taking into account the location and average annual temperature has become the result of the study. The constructed model has shown that the forests of the sanitary protection zone can remain resistant to negative environmental factors for a long time. However, the trend of an average annual radial growth of Scots pine has been showing a gradual decrease in this indicator since 1990 as a result of an increase in man-made loads. Therefore, in order to preserve the plantings of the SPZ, it is necessary to carry out a number of restoration measures that will increase their resistance to external man-made factors and adverse climatic conditions.

Abstract
The influence of straw embedding of grain crops in various ways in combination with doses of mineral fertilizers on the yield of winter wheat and the main indicators of soil fertility have been studied. It’s been revealed that the use of renewable bioresources in the form of straw does not provide a significant effect on winter wheat yields in the first year of research. The highest yield level was obtained in the variants according to the background: 59.5 centners per hectare and 53.5 centners per hectare in both methods of treatment.

The article presents the results of a long-term research on the study and evaluation of productive and adaptive qualities of a winter soft wheat variety, Beauty, of FSBSI “SCP named after P.P. Lukyanenko” breeding. In the process of research conducted in various zones of the KBR, the best qualities of the variety have been revealed, confirmed by the results of a comparative test of seeds of various reproductions of Beauty winter wheat under the conditions of prolonged replanting.

Abstract
The article provides a comparative assessment of traditional and developed fish-breeding tanks for keeping bester yearlings. As a result of growing fish in different reservoirs, it’s been found that when using the “ICA-2” and “INTEX” tanks, there is practically no difference. When comparing the use of "ICA-2" and a semi-buried adaptive reservoir, it’s been found that the weight of fish was higher in the second case, when compared with the benchmark, by 1.5%, the average daily gain - by 5.3%, the coefficient of nutrition - by 1, 2%.

Abstract
The urgency of the problem of optimizing the nutrition of top onion in the foothills of Adygea has identified the formulation of an experiment with the introduction of different doses of nitrophosphate and agrovitakva (AVA) in the form of nutrition. Dogadka variety of local breeding has been selected as an object of the study. The positive effect of fertilizers on the development of the leaf apparatus of plants, the structure of crop yield, commercial qualities of onions have been shown. The results of the chemical composition of onions of different variants of test are presented.
