Abstract
It’s been determined that the amplitude of the NMR signals of protons of the solid phase, that is, the amplitude of NMR signals of soap protons (Am), is an analytical parameter characterizing the content of the soap formed, and, consequently, the content of free fatty acids. It’s been revealed that there is a linear dependence between the acid-degree value of oil extracted from sunflower phospholipids and the amplitude of NMR signals of soap protons, which is described by the following equation: A.n.=0,2481× Ам+ 0,4319. A method has been developed for determining one of the main quality indicators of sunflower phospholipids-the acid-degree value of oil extracted from sunflower phospholipids, using the nuclear-magnetic relaxation method, which makes it possible to eliminate the use of toxic solvents, as well as to improve the accuracy of the analysis results.

Abstract
The results of the research on the effect of “Pear Powder” food additive on the quality and properties of first grade wheat flour are presented. It’s been determined that adding of the investigated food additive to the first grade wheat flour has a strengthening effect on gluten flour, which converts the gluten flour from quality group II to quality group I. It is shown that adding food additive to wheat flour provides an increase in its gas-forming ability, that is due to the presence of sugars, minerals and organic acids in the additive, that contribute to the intensification of the gassing process.

Abstract
Theoretical basis of effective removal of moisture from beet pulp by pressing before drying is given in the article. A scheme of a sulfide installation introduced in a number of enterprises of the industry is presented, and energy-economic calculation of its application is performed. The expected economic efficiency due to an increase in the yield of sugar, an increase in the degree of pulp compaction and a decrease in the consumption of conventional fuel will amount to about 2800 thousand rubles for every 100 thousand tons of processed sugar beet.

Abstract
Technology of production of dietary supplements based on fat from the liver of the Black Sea dogfish is given. Increase of biological and nutritional value and expansion of functional orientation of dietary supplements was achieved due to simultaneous introduction of encapsulation and a capsule of fat - and water-soluble biologically active substances. Consumer properties and indicators of authenticity of the developed dietary supplements and the degree of satisfaction of daily requirement of a human body in food substances have been estimated.

Abstract
The aim of the study is to study the antagonistic activity of biologics against phytopathogens of bacterial and fungal nature, which cause microbial spoilage of apples. Varieties of apples zoned in the Krasnodar Territory have been chosen as objects of research. It has been determined that the Vitaplan and Extrasol biopreparations are the most effective against a wide range of phytopathogens under investigation.

Abstract
The article presents the results of studying the effect of treatment of meat semi-finished products with natural antimicrobial substances and ultrasound on changing microbial contamination of their surface during storage. The dynamics of the number of microorganisms on the surface of samples during storage has been determined. An organoleptic evaluation of the culinary-processed samples has been carried out.

Abstract
As a result of the studies experimental data were obtained, which make it possible to clarify the “Method for the determination of nicotine in liquids for electronic nicotine delivery systems” in the part of the method for preparing solutions for the calibration curve. Metrological characteristics (repeatability and reproducibility) of the method are determined based on the results of interlaboratory comparative tests (ICT).

Abstract
The IMP 215 strain of Bacillus subtilis has been studied for its potential use as a biological control agent for the Alternaria radicina and Botrytis cinerea phytopathogens of carrot during storage. In the presence of the IMP 215 strain of Bacillus subtilis the investigated phytopathogens slow the rate of development and reproduction on the wound surface of root crops. The obtained results allow to make a conclusion about the expediency of using the IMP 215 strain of Bacillus subtilis to reduce the incidence of root crops of carrots during storage.

Abstract
The article presents the results of research on the quality and safety of four cheese samples. It has been established that “Adygeyskiy” dry cheese has high quality and safety indicators despite the maturity dates, does not contain plant raw materials and GMO, unlike two samples of foreign cheese (Parmesan Dolce Granto, Uruguay, Parmigiano Regano, Italy).

Abstract
The study of the mineral nutrition of Japanese Persimmon (Hiakume variety) on the basis of multifactorial experience has provided an opportunity to develop a vegetative diagnosis of its plantations humid subtropical conditions. The terms of diagnostics of the degree of provision of plants with food for operative correction of the yield and criteria for the provision with basic elements of nutrition (N, P, K, Ca, Mg) are established. Abstract
The results of the study of apple plantations productivity of various graft and rootstock combinations laid by a new planting material with high budding and dug in planting (an average of 15-20 cm) are presented. Influence of semi-dwarf SC 2U, MM 102 rootstocks and SK 7 dwarf rootstock on the timing of the introduction of an intensive type garden in the fruiting and productivity of plantations with different planting schemes: 4 x 0.9 m; 4 x 1.2 m; 4 x 2.4 m have been studied on the example of Prikubanskoe apple variety.

Abstract
The influence of the root application of boron and zinc on the state of the pigment system of assimilating young and mature leaves of Samellia sinensis (L.) O. Kuntze evergreen shrub of different has been studied in natural conditions of the humid-subtropical zone of Russia. An increase in the stock of chlorophylls and carotenoids from July to October-November has been revealed. The ratio of chlorophyll a / v varied during the growing season in the range of 1.22-2.56 and was higher in variants with the use of microelements. The quantitative content of photosynthetic pigments in summer when using boron and zinc in mature leaves was commensurate or reliably below the control, in contrast to the autumn one, where the chlorophyll a content was higher. The dynamics of the restoration of the pigment fund in the summer-autumn period was more intensive in variants with the use of boron and zinc. Functional activity, estimated by the index of slow induction of chlorophyll fluorescence, “viability index”, was assessed as higher in comparison with the control one.

Abstract
Storability of plum fruits stipulated by varietal peculiarities have been studied. It’s been determined that treatment with SmartFresh is effective for a short-term storage of plum fruits of the varieties of Stanley, Fortuna and early Kabardin in the ordinary atmosphere and ensures preservation of commercial qualities (freshness, juiciness, hardness, turgor of pulp) and high biological value. The yield of standard fruits after 1 month of storage is more than 90% due to treatment with SmartFresh, natural weight loss is 1.3-1.8 times less, nutritional and biological value is 8-15% higher than the control one.

Abstract
Filbert (Corylus avellana L.) is a valuable edible nut-plant. For its plantation cultivation highly productive forms and varieties are used. Breeding valuable populations ensures obtaining food products, preservation of biodiversity and continuation of the micro evolutionary process of the specie. In these cases, it is important to evaluate the initial material for quantitative economically valuable indicators- mass of nuts and kernels, yield of the kernel, one-dimensionality of fruits in shape and size, and total score of the variety fund. Depending on the purpose, the assessment is carried out with a different error and significance level. This is related to the sampling volume of the samples studied. Estimation of quantitative indices of filbert fruit was carried out according to the author's method. 578 fetuses were randomly selected in the population. 30 fruits were studied in 8 plants. The sample size for estimating the “nut mass” in the population and in individual individuals with an error of 0.1 g (α = 0.05) is 64 and 29 fruits respectively. To estimate the “kernel mass" index the sample size with an error of 0.05 g and α = 0.05 in individuals is 7, in the population - 15 nuts and more. The sample size required to estimate the “core yield” with an error of 1% (α = 0.05) is based on an analysis of 275 nuts. At least 64 nuts are studied in different ramets. The one-dimensionality of fruits in form with an error of 5% (α = 0.05) is determined in the population on the basis of the analysis of 18 nuts, and in individuals of 12 nuts and more. The one-dimensionality of fruits in size with the same error is estimated in the population at 45, in individuals - at 22 nuts. The total score of the quality of filbert fruits in a population with an error of 1 point is established not less than 57 fruits. In individuals in this case, 30 nuts are selected. The sample size for all indicators is much smaller at reconnaissance surveys with an error of 10% or more (α = 0.1).

The analysis of green plantations in Saratov is presented. Studies have been conducted to reveal the resistance of leaf plates of common trees and shrubs to the effects of toxicants. Recommendations are given to expand the range of vegetation at the sites of plantings of the Saratov territory taking into account degree of gas stability.

One of the methods for increasing the productive output of nutrients from feed rations is the use of biologically active substances. We have tested some of them, which are the cheapest and the most available. The aim of the study was to evaluate growth, feed costs for pigs that received various sources of biologically active substances.
