Abstract
Express methods for determining oil weight fraction in vegetable lecithins (sunflower, soybean, and racial) based on the pulse nuclear magnetic resonance method have been developed, which have a number of advantages compared with arbitration method, namely, the use of toxic organic solvent (acetone) is excluded, i.e. these methods are environmentally safe, the analysis time is significantly reduced (instead of 10 hours) - 5 minutes, that is, these are express methods and qualification requirements to laboratory personnel are also reduced, since the process of performing the analysis is automated.

Abstract
It is established that the introduced Anchellotte grape variety corresponds to the requirements of GOST 32030-2013 by organoleptic and physicochemical parameters. The qualitative indicators of wort and wine material from Anchellotte variety are determined in comparison with the control Saperavi variety. Tasting assessment confirmed the viability of the Anchellotte grape variety as a raw material for the production of quality red wines.

Abstract
At present there are no methods for calculating shrinkage during cooling and freezing of food semi-finished products, which are multilayer structures. In this article methods for calculating shrinkage during refrigeration of this type of food products are proposed. An experimental test using the example of test semi-finished products with different fillings showed that the difference between the calculated and experimental shrinkage data during cooling and freezing of these products was 5 ... 10%. The proposed method of calculation of shrinkage allows to determine the magnitude of mass losses during refrigeration treatment of multi-layer food products with sufficient accuracy for engineering calculations.

Abstract
The data characterizing the effectiveness of hypocholesteronemic action of rapeseed and sunflower lecithins in experiments on laboratory animals are prsented. It has been established that rapeseed and sunflower lecithins exhibit hypocholesteronemic properties. It has been found that the degree of reduction in the mass fraction of total cholesterol and low-density lipoprotein cholesterol in the blood serum of animals of the experimental group that received cholesterol + rapeseed lecithins in addition to the usual diet is higher compared to this index reduction in the blood serum of the animals of the experimental group that received, cholesterol + sunflower lecithins in addition to the usual ration.

Abstract
The article presents the results of studying the effect of preliminary processing of apples with Vitaplan and Phytosporin M bio preparations with different bioagent concentration on microbial contamination of their surface during storage. The number of microorganisms on the surface of apples has been determined before and after storage. The optimal concentration of bioagent has been established, which ensures the maximum decrease of microbial contamination of the surface of apples.

Abstract
The article presents the results of studies of various varieties and clones of Persica vulgaris (Mill.) on the quantitative content of ascorbic acid, total sugar, acidity. The rsearch was carried out in the All-Russian Research Institute of Floriculture and Subtropcal Crops in the Laboratory of Plant Physiology and Biochemistry for the period of 2012-2014. Based on the data obtained, a group of peach varieties and clones with a good biochemical composition was identified. Varieties and clones differ in varying degrees of resistance to abiotic stress factors, which increases productivity and improves the taste of fruits.

Abstract
The results of studies on the effect of various doses of mineral fertilizers on the yield, chemical composition and nutritional value of the green mass of corn-soy mixture under the conditions of the Republic of Adygea are presented. The results of the research revealed that the recommended feed mix with the use of nitrogen fertilizers in a dose of N45 allowed to increase the yield in comparison with the control on average over the years of studies by 12.0 t / ha.

Abstract
The article presents the results of two-year research on U.M.N.I.K. competition aimed at developing an organomineral microbiological preparation based on the filtration sediment, acid pulp and transporter-washing sludge and fungi of Trichoderma genus in order to increase yield and microbiological sanitation of soils. The yields of crops in grain-crop rotations, as well as the results of microbiological study of soils are given.

Abstract
In the conditions of the mountainous zone of the Republic of North Ossetia-Alania more than 120 varieties of potatoes of domestic and foreign breeding were studied for breeding on economic and biological grounds. Adjustments are made to the Parameters of the Early and Middle Ripening Varieties Model for the North Caucasus Region. Estilla and Ehud varieties showed the highest productivity, Estima - more than 35 t / ha, starch content - Predgorny variety (16.73 mg%), Vladikavkazsky variety (16.37 mg%) and Adretta variety (16.31 mg%).

Abstract
The article contains the results of the research (2011-2016) on the identification of the optimal method for obtaining the initial tuber material of potatoes in the conditions of the mountainous and foothill zones of the Republic of North Ossetia-Alania. A comparative evaluation of the variants of various methods for the production of mini-tubers was made. It was proved that the use of the method of planting microplants directly into the soil in the conditions of the phytosanitary mountain zone is not inferior to the traditional methods of accelerated reproduction in a closed ground.

Abstract
The article presents the results of a three-year study of water and nutritional status of tea plants in Adygea. Deficiency of moisture and nutrients during the crop vegetative period is defined. In bogharic conditions without the use of fertilizers, the yield was 16 ± 5 c / ha. Finely dispersed watering on the background of fertilizers contributed to the increase in the tea yield up to 71.4 c / ha, which is 80% higher than the control. Processes of mobilization of mobile forms of nitrogen, phosphorus and potassium under irrigation conditions take place more intensively, due to the active removal of biogenic elements with the green crop mass and their washing out with irrigation water.
