Анализ имеющихся зарубежных научных публикаций показал, что решение проблемы продолжительности и точности лабораторных анализов компонентного состава зерновой массы и признаков качества риса является актуальной международной задачей. Перспективными с точки зрения решения указанной задачи являются системы компьютерного зрения, которые используются для характеристики свойств сырья, оценки его качества и качества готовой продукции. Однако, известные методы оценки качества зерна риса и продуктов его переработки, предложенные зарубежными учеными, имеют основной недостаток, а именно, длительность реализации метода, в результате чего отсутствует возможность оперативного контроля качества зерна риса, что не позволяет регулировать и стабилизировать режимы его переработки на отдельных стадиях технологического процесса.</p></abstract><trans-abstract xml:lang="en"><p>The article analyzes modern methods of quality control of rice grain and products of its processing developed by foreign scientists. The analysis of available foreign scientific publications has shown that solving the problem of the duration and accuracy of laboratory tests of the component composition of grain mass and characteristics of rice quality is an urgent international task. Computer vision systems which are used to characterize properties of raw materials, assess its quality and the quality of finished products are promising in terms of solving this problem.
